Keto Boneless Chicken Thighs With Spinach, Bacon & Creamy Garlic Sauce

Coming up with ideas on what to cook for dinner can sometimes be challenging when you’re the only one in your house eating Keto.

For instance tonight my son and husband opted for a traditional Italian dish of Pasta e ceci (pasta & chickpeas) and I was on my own to figure out what to make. 

I had some boneless, skinless chicken thighs individually packaged in the freezer so I grabbed one and made it with frozen spinach, bacon and a creamy garlic sauce.

Keto Boneless Chicken Thighs With Spinach, Bacon & Creamy Garlic Sauce Recipe

Ingredients

1 slice of uncured bacon
5 oz. boneless chicken thigh (skin removed)
1/3 oz. red onion chopped
5 oz. frozen baby leaf spinach
1/8 oz. garlic minced
1/3 cup chicken bone broth
1 tbsp. fresh lemon juice
1 tbsp. grated Parmesan cheese
1 1/4 fl. oz. heavy cream
salt and pepper to season

Instructions

Cook bacon in a frying pan over medium heat until crispy (about 5-7 minutes)

Set aside on a plate with paper towels and reserve bacon fat in pan.

Season the boneless chicken thigh with salt and pepper and add to pan on medium-high heat and cook for about 5 minutes till browned. Turn it over and cook the other side for about another 5 minutes. Remove chicken thigh from pan and set aside.

Add the red onion to the frying pan and sauté until it begins to soften. (about 3-5 minutes)

Add the frozen spinach and garlic. Add a little water, season with salt and pepper and stir occasionally for about 5 minutes until spinach is cooked.

Pour in chicken broth, heavy cream, lemon juice and add Parmesan cheese and simmer for about 3-5 minutes.

Place the chicken thigh back in the pan stirring slightly to combine with spinach mixture and let simmer for another 10 minutes until chicken is cooked thoroughly.

Serve and top with crumbled bacon.
