Keto Christmas Tree Meringue Cookies with Sprinkles 

Cookie Ingredients:

4 egg whites (at room temperature)

1 cup granulated Swerve

1/4 tsp xanthan gum 

1/2 tsp pure vanilla extract

Green food coloring

Keto sprinkles, for decorating

Keto Sprinkle Ingredients

1/2 cup coconut flour, divided

1 tsp India Tree green food coloring

1 tsp India Tree red food coloring

2 drops liquid stevia

24 lollipop sticks

Make the Keto Sprinkles

Preheat the oven to 250. Take half of the coconut flour and mix with the green food coloring and 1 drop of stevia. Use the remaining coconut flour and mix with the red food coloring and 1 drop of stevia.

Line two baking sheets with parchment paper and spread the coconut flour in a thin layer on each sheet. Place in the oven with the door slightly open for 1-3 hours, or until the flour is dry and has made little sprinkles. Set aside, or reserve in small Ziplock bags for later use.

 

Make the Cookies:

Preheat the oven to 225. Line 4 baking sheets with parchment paper. and draw 6 triangles on each, 2 inches along the base and 3 inches high (from center of base to tip). Place paper, marked side down on each baking sheet.

*NOTE: If you don’t have 4 baking sheets you can do one or two batches at a time depending on how many baking sheets you have on hand .

Beat egg whites in the bowl of an electric mixer until frothy. Add xanthan gum. Beat until soft peaks form. Increase speed to medium-high. Slowly add Swerve, 1 tbsp at a time, until it is dissolved and stiff peaks form. Beat in vanilla extract. You can add the Add green food coloring to get desired green color.  You can use gel or liquid food coloring. It can be added to the whole mixture or split the meringue into two batches  for a combination of green and white Christmas trees. 

Fill a piping bag (or a Ziplock bag with an end cut off) with meringue. Pipe trees with the meringue , back and forth, over the marked triangles to fill them with a squiggly pattern.. Gently push a lollipop stick into the base of each meringue.  

Sprinkle with keto sprinkles. Bake cookies for 1 1/2 to 2 hours. Check them often to make sure they don’t burn! Turn the oven off, open its door and let them cool inside. Store the cookies in an airtight container away from any heat or moisture for up to one week.

Makes 24 servings: 0 net grams of carbs!
