Keto Cream Cheese Pancakes

*makes 8-servings


(Does not include any additional toppings or butter)

1/2 c. almond flour
4 oz. cream cheese, softened
4 large eggs
1 tsp. organic vanilla extract
1 tsp granulated sweetener 
Butter, for frying and serving

**Additional toppings: whipped cream, strawberries, raspberries, blueberries, ground cinnamon

1. Mix all ingredients in a blender or  whisk together in a medium size bowl. 

2. Melt 1 tablespoon of butter on a non-stick pan or griddle over medium heat. Pour about 3 tablespoons batter and cook for about 2 minutes until golden, Flip over once and cook another couple of minutes.. Transfer to a plate and continue with the rest of the batter. Serve them topped with butter (my preference is grass-fed) and Lakanto sugar free maple syrup.
