Keto Pumpkin Spice Latte “Oatmeal” You’ll Love All Year Long

Keto Pumpkin Spice Latte “Oatmeal”

*makes 2 servings

Ingredients

⅓  cup full fat coconut milk (from a  can), + more for next  day

⅓  cup brewed coffee

½ cup chia seeds

2 tbsp canned pumpkin puree (not  pumpkin pie!)

1 tbsp hemp seed

2 tsp confectioner’s Swerve or 3 to  4 drops of liquid stevia

¾ tsp pumpkin pie spice

½ tsp pure vanilla extract 

Pinch pink Himalayan sea salt

Directions

  1. Add all ingredients to a glass  container with a lid (at least 12oz)  and stir until well-combined.  Cover and let it sit in the fridge  overnight, or for at least 8 hours
  2. Add a little extra coconut milk  the next morning – just a  tablespoon at a time – until your  desired consistency is reached.
  3. Divide between two small  bowls and enjoy!
