Keto Sausage Spinach Avocado and Mushrooms Recipe

Do you ever find times when you open the door to the refrigerator and just don’t quite know what to eat?

That has happened to me many times and when it does I just use a little imagination and throw together a quick and easy meal.

Some of my favorite meals have come from doing that and this Keto Sausage Spinach Avocado and Mushroom recipe is just one of them.

I used hot Italian sausage but you can use any kind of sausage you like.

Keto Sausage Spinach Avocado and Mushroom Recipe

Ingredients

In a medium frying pan heat oil over medium heat. Sautee garlic for 1 minute.
Add sausage to pan and cook until brown and no longer pink. Remove sausage and set aside.
Add mushrooms to pan and cook until tender about 1-2 minutes.
Add spinach and 2 tbsp. water. Cook until spinach is tender.
Season with salt, pepper, and nutritional yeast. Add a pinch of red pepper flakes if desired.
Gently mix in the sausage and simmer 2-3 minutes. Serve immediately.
