Keto Beef Broccoli Stir Fry Recipe with Cabbage and Zucchini

When I don’t have the time to make dinner my son who I lovingly call Chef Jeff always comes to the rescue . This recipe was no exception and one he created himself for this scrumptious beef, broccoli, zucchini and cabbage stir that includes our favorite low carb vegetables and our whole family enjoyed.

We both love to cook and are always trying to come up with creative  ways to prepare dinner from whatever we can find in the refrigerator.

Keto Beef Broccoli Stir Fry Recipe with Zucchini and Cabbage

Ingredients

  • 2 1/2 lbs. beef round cubes
  • 2 cups broccoli florets
  • 1 cup shredded green cabbage
  • 1 large zucchini cut into quarters and sliced into 1 in. thick pieces
  • 1 scallion (whites and greens chopped)
  • 2 tbsp. avocado oil

Stir Fry Sauce

  • 1/4 cup coconut aminos
  • 3/4 cup chicken bone broth
  • 1 tbsp. siracha sauce
  • 1 scallion (whites and greens chopped0
  • 2 cloves garlic minced
  • 1 1/2 tsp. ground ginger
  • 1/2 tsp. pink himalayan salt
  • 1 tsp. ground black pepper
  • 2 tsp. sesame oil
  • 1 tbsp. hoisin sauce
  • 2 tsp. xanthan gum

Instructions

  1. Mix all ingredients for stir fry sauce in a bowl and set aside.
  2. Season beef cubes with salt and pepper.
  3. Heat 1 tbsp. avocado oil in large frying pan or wok at high heat.
  4. Add beef to pan. Cook 5-7 minutes.
  5. Add white onion and scallions. Cook for 2-3 minutes.
  6. Remove meat, onion and scallions from pan and set aside.
  7. Add in 1 tbsp. avocado oil to frying pan at high heat.
  8. Add broccoli and stir-fry 3-5 minutes until crunchy tender.
  9. Add zucchini and cabbage and stir-fry 3-5 minutes until tender.
  10. Add beef back in pan and pour sauce over meat and vegetables. Simmer uncovered 3-5 minutes.
  11. Serve immediately over cauliflower rice (optional)
  12. Garnish with scallions (optional)
