Keto Stuffed Avocado Chicken Bacon Boats

These Keto Stuffed Avocado Chicken Bacon Boats are one of my favorite recipes to make. They’re chock full of of flavor and can be put together easily and are perfect for a side dish, lunch or dinner.

I don’t know what the price of avocados are where you live but here in Connecticut the price can vary to as low as $.69/each to as high as $1.99/each in any given week. So when they go on sale I make sure to buy enough of them to get me through a full week of meal planning. 

When you’re following the ketogenic lifestyle avocados are one of the best nutritious whole foods you should be adding to your daily diet.

Avocados are one of the most versatile foods and can be used in so many different recipes for breakfast, lunch or dinner.

Keto Stuffed Avocado Chicken Bacon Boats

The prepping time to make these keto stuffed avocado bacon boats is pretty quick and easy to do. 

In a small frying pan cook the bacon until it’s nice and crisp and then set it aside on a plate with a paper towel to drain off any excess fat.

Next step is to cook the chicken pieces in the remaining bacon fat in the pan over medium-high heat until they’re lightly browned on the outside.

In the meantime cut up the grape tomatoes, red onion and cilantro. Then slice the avocado in half, take out the pit, score them with the tip of a small paring knife, scoop out the squares with a small spoon into a medium size bowl. Set aside the avocado shells to stuff for the boats.

After scooping the avocado into the bowl mash it a little and add the chopped ingredients.

Once the chicken is done cooking add that to the avocado mixture with the lime juice, garlic powder, salt and pepper and mix it all together.

Last step is to scoop the avocado mixture into the shells and top with crumbled bacon.

Recipe

Servings: 1

Ingredients

  • 4 ounce Boneless Chicken Breast cut into bite size pieces
  • 1 slice Uncured Bacon
  • 1 Hass Avocado
  • ⅓ ounce Cilantro
  • ¼ ounce Red Onion
  • 3 grape tomatoes quartered
  • 2 teaspoon Fresh Lime Juice
  • ⅛ teaspoon Garlic Powder
  • ⅛ teaspoon Onion Powder
  • ⅛ tsp Himalayan Fine Pink Salt
  • Ground Black Pepper

Instructions:

Cook bacon in small frying pan until crisp, set aside on a plate lined with a paper towel leaving the remaining fat in the pan.

Add the chicken to the bacon fat and cook over medium high heat until the chicken is lightly golden. (5-7 minutes)

While the chicken is cooking cut up the grape tomatoes, red onion and cilantro.

Cut the avocado in half, remove the pit, score with the tip of a small paring knife and scoop squares with a small spoon into a medium size bowl. Set the avocado shells aside for filling later.

Light mash the avocado. Add the grape tomatoes, red onion, cliantro, cooked chicken, lime juice and season with garlic powder, pink salt and pepper. Mix together.

Spoon into avocado shells and top with crumbled bacon.
