Southwestern Keto Breakfast Skillet | Ready In Under 30 Minutes

There’s nothing more satisfying that starting off your day with a delicious breakfast skillet. This Keto Southwestern Breakfast Skillet fits the bill and is loaded with flavorful ingredients and seasonings.

Serves: 4
Prep time: 15 minutes
Cook time: 15 minutes

Southwestern Keto Breakfast Skillet 

Ingredients:

2 TBSP grass-fed unsalted butter
4 large cage-free eggs
4 strips uncured bacon, cooked crisp
1 tsp. ground cumin
½ tsp. ground chili powder
2 tsp. Italian seasoning
Sea salt and black pepper, to taste
1 8-oz. bag radishes, rinsed, trimmed, and quartered
¼ cup red onion, diced finely
¾ cup tri-color mini sweet peppers, diced
2 TBSP. fresh cilantro, chopped
1 large avocado, diced
1 large lime, cut into 8 wedges

Directions:

  1. In a large non-stick skillet melt one TBSP butter over medium heat.
  2. Add the red onion, radishes and Italian seasoning. Season with salt and black pepper, to taste, and cook, stirring occasionally, until the onions begin to soften and the radishes develop some color, approximately 3-4 minutes.
  3. Add the remaining 1 TBSP of butter along with the peppers to the skillet. Cook, stirring occasionally, until the peppers begin to soften, approximately 3-4 minutes. Add the cumin and chili powder
  4. Push the vegetables aside with a spatula and create four “wells” in the skillet Add an egg into each well. Reduce heat to medium low. Cover and cook until the eggs are cooked through, approximately 3-4 minutes.
  5. Remove the skillet from heat and top with the fresh cilantro, crumbled bacon. diced avocado ad lime wedges.
